 Herb-Roasted Turkey Breast with Cauliflower Mash

Ingredients:

For the Turkey:

  • 1 bone-in, skin-on turkey breast (about 4-5 pounds)

  • 2 tablespoons olive oil

  • 2 teaspoons dried rosemary

  • 2 teaspoons dried thyme

  • 1 teaspoon dried sage

  • Salt and pepper to taste

For the Cauliflower Mash:

  • 1 large head of cauliflower, cut into florets

  • 2 cloves garlic, minced

  • 2 tablespoons butter

  • 1/4 cup heavy cream

  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  2. Prepare the Turkey:

    • Pat the turkey breast dry with paper towels.

    • In a small bowl, mix together the olive oil, rosemary, thyme, sage, salt, and pepper.

    • Rub the herb mixture over the turkey breast, making sure to coat it evenly.

    • Place the turkey breast on a roasting pan, skin side up.

  3. Roast the Turkey:

    • Roast the turkey in the preheated oven for about 20 minutes per pound or until the internal temperature reaches 165°F (74°C).

    • Baste the turkey with pan juices every 30 minutes.

  4. Prepare the Cauliflower Mash:

    • While the turkey is roasting, steam the cauliflower until tender.

    • In a pan, sauté the minced garlic in butter until fragrant.

    • Add the steamed cauliflower to the pan, and mash with a potato masher or blend until smooth.

  5. Serve:

    • Once the turkey is done, let it rest for a few minutes before carving.

    • Serve slices of herb-roasted turkey with a generous portion of cauliflower mash.
