 Low-Carb MexicanLettuce wraps

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 1 cup cherry tomatoes, diced

  • 1/2 cup bell peppers (any color), diced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Iceberg or butter lettuce leaves, washed and separated

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through.

  2. Add chopped onion and garlic to the skillet. Sauté until the onion is soft and translucent.

  3. Sprinkle cumin, chili powder, paprika, salt, and pepper over the chicken mixture. Stir well to coat the chicken evenly with the spices.
