RECIPE OF THE WEEK
Lemon Garlic Roasted Chicken
Ingredients:
4 bone-in, skin-on chicken thighs
2 lemons
4 cloves of garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Chicken: Pat the chicken thighs dry with a paper towel, and then season them with salt and pepper.
Lemon Garlic Marinade: In a bowl, mix the juice of one lemon, minced garlic, olive oil, and dried thyme. You can also add a little lemon zest for extra flavor.
Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the lemon garlic marinade over the chicken, ensuring they are well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes. For more flavor, you can marinate it longer, even overnight.
Roast the Chicken: Transfer the chicken thighs to a baking dish, skin side up. Squeeze the juice of the second lemon over the chicken. Pour any remaining marinade over them.
Bake: Roast the chicken in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), and the skin is crispy and golden brown.
Garnish: If desired, garnish with fresh parsley for a burst of color and freshness.
Serve: Plate your lemon garlic roasted chicken with your favorite low-carb side dishes like steamed broccoli, a garden salad, or cauliflower rice.
